The Burgundy truffle, also known as Tuber uncinatum, should not be cooked. Rather, its delicate flavor should be enjoyed raw, with a drizzle of olive oil and a pinch of flaky sea salt. It can also be grated over salads, pasta, scrambled eggs, and more. To ensure everyone can properly savor the truffles, it is recommended to use 15 to 20 grammes per person. To store the Tuber uncinatum, like any fresh truffle, it should be refrigerated in a sealed container, covered with absorbent paper, and the paper should be changed every other day. The truffle can be kept this way for 7 to 10 days.
